It’s been a while since our last update and for good reason. Over the past two months we’ve installed an entire new brewery, designed and built a beer serving system, brewed like maniacs, started our soft launch inside the Big Smoke, ramped things back up at 4Corners and participated in two beer festivals and a big Canada Day (eh?) event.

So let’s start from the beginning, the “calm before the storm” so of speak.

The original plan was pretty straight forward (like all great plans). Our new gear would arrive at midnight on April 17th and we’d be full moved into the Big Smoke by 3AM. After several twists and turns through the night (including a mutiny from the moving company at 4AM) we were finally able to get all our tanks into our tiny 32 SQM brewery at about 9AM. Just in time for us to rush home, take a shower and head to the office.

Next came the installation of our system. Luckily we had an incredible engineer from our supplier (who we appropriately named “Ian”) that was able to help us complete the installation in about 10 days. We definitely burnt the midnight oil, and emerged with our fair share of scrapes and bruises, but we were one step closer to brewing that first 京A on the new system.

Once we were, “brew ready” the real fun started. We initiated our new system with our classic Worker’s Pale Ale and quickly followed with batches of our new Smoke on the Beech, our Flying Fist IPA, Mandarin Summer Wheat and a Single Hop Series – Cascade Dark Amber. Although we hit some snags and had a few minor panic attacks along the way, we are grateful that each of these brews turned out as planned and we didn’t lose any fingers or toes during the process.

June was a blur of firsts – first beers on tap at Big Smoke, first beer fest, followed one weekend later by our second, as well as our first big event – the Canada Day celebration and the unveiling of our first seasonal small batch brew – our 京Eh? Maple Saison, Belgian farmhouse ale brewed (fittingly) with Canadian Maple syrup and Sichuan peppercorn.

In June, we were also finally able to get back to our ‘home away from home’ at 4Corners. We have one beer on there now at all times, and plans to make it a rotating selection of two beers within the next couple weeks!

It’s been a wild ride, but we’re happy to say that we’re finally settling into a routine of brewing, searching for new ingredients and flavor combinations, and brainstorming on the next 京A beers and events. Oh, and of course drinking a few pints ourselves from time to time. Quality checks are important!

Most of all, we’re extremely pleased about the positive feedback we’ve received on our beers along the way. Our Flying Fist IPA was a hit at both beer festivals and sold out within a couple of days at the Big Smoke. Also, our English-style Smoke on the Beech seems to have struck a special cord with some of our British patrons who mentioned it tastes like home, and others really love our light and refreshing Mandarin Summer Wheat Belgian Wit.

So what’s next? First off, we’re going to make a concerted effort to take a break from brewing and update this blog more often! No seriously.

And we’ve got a bunch of fun events on the horizon, sure to juice things up in the Jing for late Summer. Stay tuned for more on that.

And did I mention we’ll be updating our blog more often?
